Tributes paid to former Glastonbury mayor and ‘Cod-Father’ Bill Knight

Tributes have been paid to Bill Knight, a former Mayor of Glastonbury, long-serving town councillor, and the third generation of Knights Fish and Chip Restaurant, following his passing on 9 March 2025 at West Mendip Hospital, aged 87.

Affectionately known as "The Cod-Father", Bill was a beloved figure in Glastonbury, dedicating his life not only to his family business but also to serving the local community through his time on Glastonbury Town Council.

In addition to running the Northload Street restaurant that bears his family name, Bill spent many years as a Glastonbury town councillor and was elected Mayor of Glastonbury, playing a key role in local governance and community initiatives.

The National Federation of Fish Friers (NFFF), of which Bill was a long-standing member, expressed its sadness at his passing, saying: "The NFFF are saddened to learn of the passing of Bill Knight of Knights of Glastonbury. Bill was a long-standing member of the NFFF. Our thoughts are with everybody at Knights at this sad time."

Bill's family shared their own tribute, remembering him as a husband, father, grandfather, great-grandfather, and uncle, whose warmth and dedication left a lasting legacy.

"It is with great sadness that we share the passing of William Robert John Knight – known to many as 'Bill.' Bill passed peacefully on 9 March, surrounded by his loving family. He was the third generation of our family business and a cornerstone of Knights Fish and Chip Restaurant. His warmth, dedication, and passion for our community will never be forgotten."

A condolence book has been made available at Knights Fish and Chip Restaurant for those who wish to pay their respects, and tributes or cards can be brought to the shop.

Funeral details

A funeral service will be held at St John's Church, Glastonbury, with details to be confirmed in due course.

Bill Knight's passing marks the loss of a dedicated public servant, a respected businessman, and a true Glastonbury character.

His legacy will live on through his family, business, and the many lives he touched in Glastonbury and beyond.
